10 Minute Tomato Bruschetta



Tomato Bruschetta


Made this Bruschetta super quickly before some friends were coming over New Years Day.  Pretty yummy and kinda healthy if you don't count the bread!

This recipe features more Olive Tap items which I posted about in my Caesar dressing recipe.  I highly recommend that you go to their website and see all the yummy foods they have because it's really high quality products!

What You Need:

4 Tomatoes on the vine
1 TBS Olive Oil
Splash Balsamic Vinegar
Dash salt and Italian seasoning
Favorite type of roll or bagette


Step 1:
Slice baguette into small slivers and place on baking sheet. Pre heat oven to 425.  Set aside until oven is ready.  Bake about 5 minutes or until top just about gets crispy.  If you would like the bread to be crunchy through out then leave in for 7 minutes total

Step 2: 
Dice tomatoes into desired size and combine all other in a bowl.  Mix together and serve on top of bread!  After plating the tomatoes there will be a lot of excess liquid in the bottom of the bowl but NO WORRIES.  This can be used as a quick dressing or tastes delicious with unbaked Italian bread as well!
